But it’s tasty and good, and I have a couple of content rich posts planned for the next week or so, so you’ll have to excuse my laziness this time around. Besides – I’ve never posted a salsa before and I made it to go in another upcoming dish. It’s super simple and you can throw it together in just 10 minutes. I find it best if you refrigerate for an hour before serving – the salt will cause water to ooze out of the tomatoes, which you can then drain away, making the taste really rich and concentrated, although this is by no means required. Additionally, it’s not something which is usually added, but I love adding in a bit of olive oil – just a dash. Too much lime juice/liquid and the salsa can be quite overpowering. The olive oil really helps to just take that slight edge off it. I find using the green parts from spring onions adds a great extra element of colour to the dish as well.

Ingredients
- ~10 Vine Tomatoes
- 1 large handful of chopped Spring Onions
- 2-3 Red Chillies
- 1 Lime
- 1 clove of Garlic
- 2 tbsps Olive Oil
- 2 tbsps Chopped, Fresh Coriander
- Salt and Pepper
Instructions
- Chop the tomatoes finely. Cut the chillies lengthways and then scrape out the seeds. Chop finely and then mince the garlic. Add all these ingredients to a bowl with the chopped spring onions and chopped coriander. Add in some freshly ground salt and pepper and add the olive oil. Squeeze in the lime juice and blend well. Cover and place in the fridge for a couple of hours prior to serving. The salt will cause extra liquid to come out from the tomatoes – drain this before serving and enjoy!

I used this salsa in a dish which I'll post in a few days, but you can eat it just with some tortilla chips. The taste was really fresh and light actually – I was pretty happy with how it turned out, especially once it had refrigerated for a few hours and some excess liquid had come out!

I love a good fresh salsa Charles and this one sounds like it hits the spot for me. Very Fresh! We sometimes serve a good fresh salsa with eggs for breakfast! It makes a simple fried egg a bit more exotic!

Thanks Eva – I'll have to try that! I make Baked Egg and Chutney breakfast pots sometimes for breakfast – they're really good if you ever wanted to give them a try. I can imagine Salsa gives a lovely bit of kick and fresh flavour though. Perfect for a saturday morning!

I don't find simple lazy. I find it smart. Particularly, when it's delicious and full of healthful ingredients like this salsa. Your vine tomatoes look gorgeous. I too like chillies in my salsa (often use green must try red), and the best is the addition of cilantro – which I rarely have kicking around the fridge – but is probably my favourite flavour in salsa. Thanks Kelly – I don't like it when chillies overpower something like this – I was lucky and had good chillies with just the right amount of kick that I wanted. I don't make salsa very often – will need to experiment from now on ๐

Thanks Kristy – I love limes… every time I squeeze them I wonder: do they ever have seeds inside, like lemons? I've never found them to be honest. I always think the french word for them is a bit disappointing too: "Citron Vert" (Green Lemon – how imaginative :p)

Have you made other salsas before? I'm interested in trying Ping's idea below of adding mango – that sounds really nice. I hope you get a chance to try to make one! I just looked at your recipe for "guac'" too – I love the idea of red onion in it. It's nice to have a bit of a crunch sometimes… lovely idea, although I noticed you don't add any garlic? ๐ฎ It's the first time I saw a guacamole without garlic actually!

Charles, when you talk to Mexicans they will tell you guacamole is good avocado, salt, lime juice and everything else is the foreigners' invention ๐ so we can invent whatever we want. Actually I found my recipe in a small book "Mexican cuisine".
I have never made any salsas I think… but I believe mango is excellent in everything hot (Have you seen my hot mango sauce? It was the second post on my blog, very, very old… I have been making it for at least two years and I'm making it now: mangoes are very cheap now, so I stock on this sauce-vinegar, chili, sugar and mango and it's fantastic!)

Heh, I think I rather enjoy foreigner versions (is that "gringo guacamole"?) actually! I just checked out your post you mentioned – it looks lovely. I think "winter time" for Europe is the mango season. They have them in the markets here from Autumn to Spring. I tried to buy one in early summer once and was told that they were out of season, though maybe yours were imported from a different part of the world?!
When you said "Mangoes are very cheap now" – how cheap is that exactly, I'm really curious! I can never see them cheaper than ~€1.50 per mango!

I didn't actually realise that they grow tomatoes really late here. I think I still now see some signs up saying that you can pick fresh tomatoes at the local farm… handy for me ๐

Oh yeah – I love dips… My dream evening is a load of good movies, little bowls of salsa, hummus, baba ghanoush, some cream cheese and garlic dip, and a big stack of chips or something. Yum!
