Vegetable and Goat’s Cheese Omelette

Easily modified to different levels of hunger and highly customisable, the omelette is a great thing which can easily be whipped up in a short timeframe. Serve on its own or with a green salad.








Ingredients

Omelette Ingredients

For 2 x 3-egg omelette (Serves two people)
– 3 eggs
– 2 Tomatoes
– 0.2 litres milk (around 1 cup)
– 1 green or red pepper
– 1 onion
– Goats Cheese
– 3 tbsps Olive Oil
– Salt and Pepper

Instructions

  1. Start by chopping the tomato, pepper and onion. Heat a tablespoon of oil in a pan and fry the onion lightly for a minute or so. Add in the tomato and pepper and continue to fry for a couple more minutes. Remove from heat and set aside.

  2. Crack the eggs into a jug and add the milk. If you like you can also add in some chopped fresh or dried herbs such as chervil or tarragon. Beat well together. If reducing the number of eggs, remember to reduce the amount of milk, else the omelette will be less solid when cooked and thus, harder to fold.

  3. Grab a large frying pan, heat 1 tbsp of oil per omelette in the pan and when hot pour in half of the egg/milk mix. Keep pushing the edges away from the sides of the pan and tilting the pan to roll the liquid batter from the centre onto the sides.

  4. Once the omelette starts to firm up put half of the fried vegetables over a half of the omelette. Slice up some goats cheese roughly and layer over the vegetables.

  5. Gently flip over the other half on top to make a semi-circle and transfer to a plate and enjoy!
